- In a large pot add lot water,salt and washed rice, cook till 80% done, strain in a colander.

- Heat a nonstick kadai with butter and oil, spultter musterd seed, cumin seed, curry leaves, fennel seed.

- Add ginger garlic paste, split green chillies. Sauté for few seconds.

- Add chopped onion and saute till soft.

- Add chopped tomatoes and cook till soften.

- Add chopped carrots,green peas and cook till becomes soft and tender.

- Add chopped capsicum and cook for few more seconds.

- Add all spices,salt and 1/4 cup water.cook until masala cooks well.

- Add cooked rice,mix well. Cover for 10 minutes and cook on simmer flame.

- Add chopped coriander leaves, serve with choice of pickle.
